I just use our own water that is local not city water. But i have experiemnted with bought bootle water. Havent noticed any diference. When you heat up the water it cleans itself out. I heard Dave (mate guru) that bought bootled water can make Mate more creamy tasting when pressed. No idea. Tap water works just well.
